Just recently noticed there is a tab I cannot remove called projects. What are projects? What is the difference from managing a list? Why does it exist? Why should I use it?
Please let it not be a bloated feature again

You might want to check the latest release notes, which introduces this feature: What’s new: Track and organize projects from one place, and more ✨ (0.136) - Height
Fair question! Projects is a feature that makes it easier for teams to centralize their company’s biggest initiatives. Due to the free range customization of Height (e.g. creating lists based on subjective parameters) newer users weren’t always keen on how to properly manage/track projects aside from basic list creations. Thus, this new feature lets you quickly access projects across different lists and teams because they’re consolidated into one view. More info can be found here
If projects are for centralizing our “biggest initiatives,” it makes no sense to force parent tasks to become projects.
